Everyone in animal agriculture should read a book titled Protein Power, by Dr. Michael Eades and Dr. Mary Dan Eades. This book explains very clearly what is the root cause of high blood cholesterol, arterial plaque, obesity and associated problems. They have one common denominator, which is high blood insulin levels, caused by high blood sugar levels which in turn are caused by eating too many carbohydrates. When blood insulin levels are too high, the liver is prompted to manufacture and deliver high levels of cholesterol to the blood. As a result of reading this book in November 1998, I have been able to reduce from 280 pounds to 234 pounds. My diet has shifted more toward meat, eggs, cheese and butter. Dr. Eades explains why these are the truly healthy foods.
